Growing up I was quite discouraged by my kids pallets. Neither one of my daughters liked fruits or vegetables very much and it was not for a lack of trying. I always had apples and oranges cut up celery and carrots ready for them. Cucumbers, iceberg lettuce and oranges were the extent of their veggie tolerance. I thought about pulling a Jessica Seinfield by substituting a mashed veggie for another Ingredient in a recipe. For example I could add mashed cauliflower to a bowl of mashed potatoes secretly my kids would eat vegetable. I had a girlfriend try this, she made her daughters birthday cupcakes with a mashed zucchini mixed into a chocolate batter along with strawberry tofu frosting topped with a fresh strawberries. As soon as I took a bite she asked if I could tell. Yes oh yes this was not how a cupcake should taste and you could tell by the leftovers the toddlers agreed with me. I had do desire to trick my kids but I did model good eating habits myself and added little bowls of peanut butter and ranch dressing for dipping. I get a few bites out of them once in a while but nothing like the rave review my chicken Parmesan gets. This dish comes with tomatoes whether they like it or not and oddly they seem to like it. mangos!
