My daughter Hannah has a fascination with bacon and a teenage metabolism that can handle it. Forget the eggs, toast, pancakes or French toast, this kid just orders plates of bacon; fried to a crisp with a little of the squishy fat left in tact. Unless I'm using it as an ingredient in beef bourginon I detest bacon, but I'll still make it for her. How can you say no to this, especially when its a birthday request? This adventurous teen of mine is also quite capable in the kitchen. Yesterday, she defrosted and fried up an entire 2 pounds of bacon without my knowing. I entered my house to the thick greasy scent that only bacon leaves behind, took one look at my stove and knew what had happened. The fact that she actually defrosted the package to make this food shows how desperate she was to eat it. With a shiny smile she tells me she just ate a whole plate of bacon and cooked it herself. She went on to describe the striped pieces of pork floating in a ton of fat with a high flame underneath them in the cast iron pan. All I could think was- this kid is going to burn the house down all because of a craving. I envisioned floating fat and the flame from our gas burner flickering and igniting the contents after jacking up the heat too high. Looking back all while smiling, I made sure she knew where the kitchen fire extinguisher was located and how to use it. She zoned out when I tried to remind her that cooking something on high heat does not mean it cooks faster. She was still on her little bacon high. How to remove the splattered stains on her clothes and kitchen top would have to happen later.
