Upside Down Turkey

The Sugar Cookie Murders was a fiction book given to me because the mystery involved food and cooking and the book included recipes. One of my favorite is for an upside down turkey. This recipe came from a Boston restaurant, a place known for it's hot turkey sandwiches.

You get a turkey ready to roast and you place it in a rack upside down to cook. I have made many a bird this way since getting this tip. It works beautifully as the fat from the dark meat drips down through the white meat which tends to be drier. But it does not show beautifully. If you are planning on displaying a gorgeously roast turkey with all the trimmings on the table you can't make it this way because the breast does not brown up nicely when it's cooked upside down. The breast meat does cook up extra juicy though. So the choice is yours, either you can have a good looking bird with good tasting meat. She Skype

Skype is saving her time, miles, and gas. Chauffeuring a child back and forth is part of the drill for parents, and it's difficult to say no when it's related to required schoolwork. Skype is a free, internet-based videophone that allows anyone to connect, talk, and confer. It can be great for collaborating on homework. It does not take the place of working side by side, but it certainly does cut down on the miles driven per week.
