Fancy restaurants are getting less fancy, and cheaper, because younger patrons aren't interested in the old measure of "fancy." This has people lamenting the crassness and the noise and the TV sets in the dining room, and maybe you like the stiff formality of an expensive restaurant, but times change and tastes change. And the economy changes, which is what's driving this. You can stick to "fancy" and die, or put in a happy hour menu and some LCDs showing ESPN and make money. Your choice. (Los Angeles Times)
