Already huge, the food industry's explosion of gluten-free food -- or at least labels -- is getting even bigger, which is interesting, since the number of people who actually NEED to go gluten free is miniscule. It's all faddish, but it's huge business, and they'll make more money if they convince you that gluten is bad for you. (A friend was telling me the other day that she knows someone who actually has celiac disease and needs to go gluten-free, and that woman gets livid when people claim to be "allergic to gluten.")
