Rutgers agricultural researchers are trying to do God's work and restore the old Jersey Tomato, which might require an explanation, so here goes: Way back when I was a kid, the Jersey Tomato was the very best tomato you could get: full of flavor, huge, awesome. Then, for commercial purposes, the farming industry bred the flavor out of it in favor of tomatoes they could gas into redness, firm and sliceable and longer-lasting on grocery shelves but devoid of flavor. This project seeks to bring back the tomato I remember from every roadside produce stand in the state, and it's the best news I've heard in a long time. (Philadelphia Inquirer)
