Hawaii has Spam. Philadelphia has scrapple. New Jersey has Taylor Ham/pork roll. But in Newfoundland, it's waxed bologna. Fried bologna, bologna stew, bologna stroganoff. They apparently eat bologna with everything and in every possible way. (If you're up in Newfoundland, please confirm.) I wonder how certain lowly foods become staples in some areas, and why Newfoundland, right on the sea and with abundant fish, went for bologna instead. (New York Times)
