There is a lot of speculation out there as to what will become of restaurants after the pandemic, or even how they'll manage to survive until then. And restaurants themselves seem to be grasping for life preservers. Here's one idea that's being tried in a few cities: the "ghost food hall." It's a variation on both the food hall concept that was red hot before the pandemic, several high-end restaurants sharing space with communal dining areas like an upscale food court, and the ghost kitchen concept, in which "virtual restaurants" sell varying cuisines from shared kitchens for delivery without actual restaurants. "Ghost food halls" are sharing kitchens AND outdoor dining areas. It's not a restaurant like you remember them. Seem like a good idea to you? (Washington Post)
