Paul McCartney has convinced me that meatless Mondays are necessary. It doesn't take much for Sir Paul to convince me of anything, but this decision goes beyond just being a fan. His "Meat Free Monday Cookbook" has some tasty recipes, and his passion for a better climate, food industry and overall health is inviting. I love how his beautiful wife Linda's legacy lives on past the frozen vegan foods found in my grocery store freezer. Have you checked out her Linda loves life website? www.lindamccartneyfoods.com. This is a zesty look at family, food and love. Seriously, you might never want to eat real sausage again. Tonight's dinner will consist of a fabulous butternut squash soup and spicy carrot sandwiches. Perhaps with a little White album playing in the background.
