I am always wary of Bananas Foster or Creme Brulee or any food that gets presented with flame at your restaurant table. You're combining combustibility with a low-wage worker wielding a torch. I'm just surprised more incidents like this one don't happen: four customers were injured when the waiter flamed a dessert and it exploded. Just order the pie, hold the open flame.
