The provocative headline: "New Yorkers are paying to eat trash." The truth: It's not trash, but it IS the stuff chefs normally discard, like broccoli stalks, carrot peels, bread ends, wilted herbs, and the like, cooked into a salad that's ostensibly more tasty than it sounds. Which leads to: what parts of produce won't you eat, even if it's perfectly edible? I mean, broccoli stalks aren't the best part of broccoli by far, but you CAN eat them. Carrot peels, cooked, are OK. Kale stems might be palatable if you cook them right. Are you open to trying it? (New York Post)
