It's unfairly maligned, especially by Chicago hot dog snobs, but here for your edification is a brief history of ketchup, a transcript of an interview with a professor of food studies who's written a book about the stuff, and it's about how it started as a Vietnamese fish sauce in the 17th century (I know, there was no Vietnam back then, it was in Tonkin, which is part of Vietnam today), and how it evolved into what we have today. By the way, it IS perfectly reasonable to eat ketchup on hot dogs, although the best hot dog topping would be to put both ketchup AND brown deli mustard (Gulden's!) on it. Don't @ me.
