Some Things Don't Travel Well

Pizza Hut recently began selling its version of Detroit-style pizza, and we have several ways to go with this. One is when national chains try to replicate a local delicacy -- think cheesesteaks outside Philly (never quite right, though some come close by flying in Amoroso rolls and the right cut of rib eye), "New York pizza" anywhere but New York, Chicago dogs and deep dish, you get the idea. Another is what style of pizza rules -- and if "Detroit-style" is just a New York Sicilian Grandma pie with more grease and no crust at the edges. (Wall Street Journal)
