It's More Why-Would-You-Pay Than Pay-What-You-Want

By now, you've seen how Panera Bread has opened up a Pay-What-You-Want restaurant near St. Louis, with patrons paying whatever they think the meal was worth or signing up for future, and ill-defined, "volunteer work." How will that work? If other restaurants' experiences are any indication, not well; Most who have tried the plan have folded or aren't doing all that well. It's human nature not to pay, or not to pay enough.
